I tried to reproduce this error, but, unfortunately, i cant.
Try to delete all folders from ‘app/cache’ directory manually and then re-run ‘app/console oro:platform:update’ command

Also, it looks weird that this command tries to load some fixtures during update from 1.1.0 to 1.1.1 Actually, it shouldn’t. It looks like you try to run this update against empty or older version database. Can you re-check database configuration in ‘prod’ environment?
